Last month I realized late in the day that I was very low on cookies for guests, but it was SO hot--too hot to turn on the oven. I googled "no-bake cookies" and came up with a lot of references to the same kind, but they all used peanut butter, which we can't use because of peanut allergies. So I found this recipe, which doesn't use peanut butter (thank you!) at Lynn's Kitchen Adventures. It calls for quick oats, which I didn't have, so I used some old-fashioned oats and put them in the food processor to grind them a bit finer. I also played with the recipe the next time I made them and found that a cup of coconut is a fine addition. Click here for a printer-friendly pdf version.
No-bake peanut butter-free cookies

makes about 2 dozen cookies
2 cups sugar
1 cup butter
1/2 cup milk
4 tablespoons cocoa
1 tsp. vanilla extract
3 cups quick oats*
3/4 cups chocolate chips
1 cup coconut (optional)
Bring first four ingredients to a boil and cook 1 minute. Add vanilla, oatmeal, and chocolate chips and stir until combined. Add coconut if desired. Drop onto waxed paper (see notes below) and cool completely.
* I did all this in a Dutch oven so I only used one pot! I had old-fashioned oats but not quick oats, so I put them into a food processor to make them a little more powdery. I also tried adding a cup of coconut the next time, which was great. I used a silicone Silpat liner for my baking sheet instead of waxed paper. I also used a #40 scoop to keep the cookies consistently sized and learned not to squash them flat.
